The Fermentation Science and Technology program at CSU is using the new Lory Student Center Brewery to undertake practical research and study in the art of craft beer brewing. Many local industry leaders have supported the program – and this project – with donations of equipment and finishes. The 10-hectoliter system is housed in a 1,600-square-foot space adjacent to the recently renovated Ramskellar lounge in the basement of the Lory Student Center. Grain cracking, brewhouse operations, fermentation, packaging and CIP systems – plus student classrooms – are all included.
